The Arid Bushmanland region’s locally adapted Ice Plant is sourer than the Western Cape Variety. The taste is full bodied, bringing forth the essence of the Karoo soil.
Cooking inspiration:
Rinse well and roughly chop any accompanying stems.
Excellent addition to raw salsas or grain salads; use a whole raw leaf as a low carb cracker alternative, loaded up with spicy, creamy, or meat-based fillings; use lightly cooked in a stir fry; or as a spinach alternative.
* Notes: the degree of acidity and notes of flavour vary by season. Don’t add salt.
